I'm trying to follow the Interrogating Windows and web applications example in the Robotics System Architect lesson and when I interrogated the Web Application, the option to click and check on Create Global Web Page did not present itself, therefore I could not follow the example. I'm currently running on Windows 10 1904 and on Pega Robotic Studio 18.104.22.168. I am also running in IE 11.

When I have seen that, it usually means there's some security software preventing Pega Robotics from injecting into the browser. The combination of Studio and Windows 10 version (and IE 11 of course) is the same as mine and everything is working for me. I would assume that you are unable to see any web controls or interrogate anything inside the browser window. Is that correct?

Product is currently working through these last small security updates from MS. A very quick solution is to delete the adapter in the ACME project. Then instead add a Universal Web adapter for the web adapter in the challenge. On the properties grid, update the Accepted Domains to add training.openspan.com as domain and mode as Starts with. That will keep your all chrome tabs and browsers from closing when you debug or stop the interrogation.
BTW, a new version of the course will be published soon to perform these steps as well.
