You cannot edit the inherited styling, so you can create a new format of Dropdown in 'My format' and use this in your application.

The blue colour selection is the default behaviour of the browser, you can refer the below article to tweak this behaviour:

There is no provision given to change the selection background in 'My format'. Tried above change but no luck, issue still persists.

.field-item select, .wk .field-item>span select{color:red;background-color:green;}

change the colors according to your need.
