Creating WO by reading an unstructured email

Hi,

I have a requirement where i need to create a work object by reading an email through Email Listener, which can be done.

Here i need to set all details on case (to properties on case) by reading an unstructured email (User may send email in any format with the required details). Heard Text Analytics has to be used for this.

Could someone please explain how to do that or provide a useful source.
