Is there any way to be able to edit the HTML of the table (so I can apply inline CSS styling)? Or I guess I could use a <style> tag, but I also can't specify that particular table since there is no associated ID or class name I could call to apply styling to...
Autogenerated tables in pega are basically layouts which can be branded using branding wizard/skin in different versions in pega.
The problems is you would see styles missing in the email since the email html might not have the included style sheets.Check this first or include the respective css content in the html.
For the second part of your question, the layouts in pega can have an ID. Go to layout properties->advanced tab-> you see an ID field. This ID field can be used.
Table tags generally do not have classes.Look for class attribute at the <td> tags inside the table which generally controls most of the styling. (sample class for an OOTB td-dataLabelWrite which can again be customized using properties)
