Hi,
1.Pega Logs
These are the logs written by system whenever exception occurs in our environment.
eg: Null pointer exception or Array index out ofbound exception.
2. Alert Logs:
These are the logs returned by system whenever system finds something undesired execution happens.
There is BIX logs too.

We can use Log-Message method in an activity to set message in a log for debugging . Please find below link for more details.

Yes, you customize log messages in pega.
You can create your custom log java function and can add as many parameters as you want to print in logs.
To call your function from any activity you have to do below step in property-set method:
Param.LogMessage ..... call your custom function with proper parameters (ex- @CustomLogs(property1,property2,property3,"Custom Message") )
