Accessibility and WCAG 2.1 conformance

I'm looking for recent accessibility statements or supporting materials. I've seen the VPAT 2.0 prepared in Feb 2019 but it doesn't include WCAG 2.1 - is there a more recent VPAT (ie a VPAT v2.3)?

I've also seen 'Demystifying application accessibility and testing' from 2017 - is there any more recent documentation about conformance with, and testing against, WCAG 2.1?
