How would someone edit or delete fields that are created?

For example, a "date" field was created as type text, then used on a form. Later the user wants to change this to a date type - it doesn't seem to be able to be edited in the form and even when removed, the field is remembered in the system so that now the "date" label cannot be used again. I suppose the user could go with fecha, dato, datum, etc - but it would be nice to use the word "date" again.
