OOTB Pega icon
. Is there already an OOTB Pega icon we can use for marking a participant which has a substitute? Icon should be shown beside the name?

Yes.
Pega designer and then follow this. Pega bubble ==> User Interface ==> Image Library.

further to the preb included images, there are the standard icon classes, these are used by selecting icon class and providing for example: "pi pi-bars"
