Can you perhaps rephrase your question and/or provide screenshots?

It sounds like you want to include the "Select.." placeholder that is often seen in dropdowns. You've included this, and see it at runtime.

But then at the end of your post you are asking how to remove it?

What is the source of the Dropdown ?

Are you using a Local list for dropdown source? [Local List may be having Select as an entry]

Could you please provide some snapshot of the configuration.

in the below image place_holder is a placeholder shown after clicking the "includeplaceholder" check in the drop down, i guess you are expecting that 

this place_holder should not be shown in the drop down list but may be to be show as a heading.

pls let me know?
