Can we set outlook email category from PEGA?
After email listener processed the request, we need to set the category for email in outlook. Is there any OOTB function available to do this?

I'm not sure what exactly you mean. Is the category a header in the email?
What are you trying to do with the category?

If I understood the request correctly, you want to modify the email on the mail box server after it was processed by the Pega EmailListener.
For this requirement, there is no OOTB functionality available in Pega.
Under some circumstances, you can achieve that with a Java step. Refer to the documentation for the JavaMail API for details (https://javaee.github.io/javamail/docs/api).
